Indeed, the CMB radiation is one of the "pillars" of observational evidence. Firstly, the fact that the CMB exists is good for the BB theory and secondly, the fact that it exhibits a perfect black-body spectrum is further evidence.

Hmm... I'm not sure I follow. When a pair annihilates it creates two photons.
