I agree with you probability theory probably rules the sub-atomic world. This would explain the uncertainty principle, degrees of freedom and asymptotic f
freedom. Once the atoms combine to form a real substance like a grain of sand then there is a balancing of forces and classical Newtonian physics rule. Deterministic physics.
