I play a music synthesizer but I enjoying seeing how a good guitar player is able to not simply play notes but can physically adjust quite a range of properties in just playing a single note. There are generally a couple aspects (volume and decay time to an extent) that you can alter on a synethsizer, but there are probably at least have a dozen ways in which a note can be altered when playing a guitar and, if someone's really good they could almost do that to every single note played - with a typical musical keyboard, there's no way to realistically do that in real time, though a lot can be done after the fact on a synthesizer.
