    Really Good Receipes !!

    This is an old one that I have reposted from another forum. Hope to add many more


    Well ..... Its raining again here today. Somehow the heavens seem to know when I am going to have days off and get even with me for previous infringements. So my new camera can't be taken out.

    So I decided to make Chicken Soup. But this is not ordinary Chicken Soup, this is really great Chicken Soup, invented by accident.

    Heres how you make it. I don't use quantities, whatever I have goes in.

    1.. Finely chop Onions and chillies. De-seed the chillies if you don't want it too hot.

    2.. Cook them down with a slurp of Olive Oil in a large hot cast iron Skillet until they are caramelised. About 5 mins.



    3.. While they are cooking down, chop your chicken thigh fillets into chunks, removing as much fat as you can. They MUST be thigh fillets. Salt and Pepper well.

    4.. Add them to the hot skillet. Turn the gas up to bring the temperature back up quickly, then down again and sizzle them gently for 15 mins, at least, until caramelised.



    5.. While the thigh fillets are sizzling, peel, squash, and chop a whole lot of Garlic. Heaps.

    6.. Chop two leeks fairly thinly, right up into the green parts.



    7.. When the chicken, onions and chillies are starting to brown well and all the moisture has nearly evaporated add the Leeks and Garlic.

    8.. Stir everything around on high heat and leave to gently simmer



    9.. While the skillet is sizzling gently away, dice some Spuds. I used Dutch Cream today, but any kind will do.

    10.. Put the diced Spuds in a bowl and cover with water.

    11.. When the chillies, onions, chicken, garlic and leeks have cooked down reasonably well, transfer them into a hot Dutch Oven or suitable heavy Pot.

    12.. De-glaze the skillet by pouring some of the Starchy soak water into it while very hot. (Better if you use Chicken Stock)

    13.. Add this de-glazed gravy water to the mix in the heavy pot (Better if you use Chicken Stock)



    14.. Add the Spuds and remaining soak water to the heavy pot. (Better if you use Chicken Stock)



    15.. Stir everything in well and leave on a low simmer for a couple of hours or so. Your guess.

    16.. When it is simmered to your satisfaction, stir in some cream after it has cooled a bit and gently reheat.

    17.. Step 16 is not necessary if you are on a diet.

    18.. Clean your skillet, re-heat it to dry and oil it so no oxidation (rust) forms



    19.. Clean the kitchen immaculately before your partner gets home from work. Most important !!

    20.. Sneak into your Stepdaughters room while she is studying in the TV room and raid her cocktail mix stash.

    21.. Make yourself a nice cold drink of whatever you managed to steal. In this case 'Wipeout' and something unpronounacable



    22.. When your stepdaughter finds out. Blame it on your partner. This works vice-versa for many other little domestic problems as well.



    23... Can't show you a Pic of the soup as its not finished yet and that 'unpronounacable' drink is suddenly starting to make me slur my typing.

    Hope you enjoy, it really, really is very tasty with some chunky bread.

I could have sold napkins by the dozen but took pleasure to see the wet shirts of those that eavedropped on our words. When the add of herbs came to the ponder and coffee still warming my brain i suggested the add of coffee to the roast stews and thrown back a bit to this idea explained the origin of coffee to them.
    From lemon rhines to local mushroom picks to add by the time we were finished you could have wrote a book on the little preasures of life available.

    Going home with my bounty I looked in the yard for mushrooms and found them. These LBMs fresh got chopped up ready to fast fry and i sliced the two brests up in thin slices and soaked them in a dish of shallot, mint and olive oil with a an ounze of Bailies Irish Cream.

    The blackened cast iron fry pan was taken from it place on the wall, wiped with an oiled cloth and set ready on the stove. Then a pot for veggies was readied and it one inch of water set to boil under the steam tray of mixed green string beans, and carrots.

    Turning on the fry pan i further set the oven to two hundred for the fresh bread rolls to be heated up. Then, with teh oil in the pan sizzeling and popping at about three hundred ladled the brests in for a stirring routine and add of my secret ingrediments. Thus near done quite quickly I added the mushrooms bits and after a minute of stir covered and turned the heat off.

    by this time the water was boiling and steaming my vedgies and bunnies in the oven were smeklling like fresh bread. I set the table with attention to what wine i would be having and decided on some homemade blackberry would suit the occasion and opened mycelter with pride.

    This taking just long enough for the vedgies to boil over I turned them off as i did the oven .. cheating there to wolf down a bun after a slab of butter was wiped in it middle. A final stir of the mame dish raised the aroma to un bearable limit and i ladled it all on the plate then vedgies and buns, poured a second glass of wine and started to eat...

    I do not remember anything after that but varied musical sounds of a Sitar in nature, animal howls that could have been my wolf somewhere wanting to go out or in and strange visual effect simular to looking at alternative altra violet pictures and composites with night visions.

    My friend hearing this in the AM of today went and picked his own mushrooms with great laughter to my puzzelment and non remember of what it all tasted like. I will of course do the feast again tonight as i have two more of those to try out.

    My own suggestion for a really good 'recipe' would be to select a partner with cooking skills, lol....

    When both share in the neccessary, and often mundane tasks of nutrition and the attendant details surrounding same, it adds diversity to one's diet and liberates time for each person to utilize in pursuits of their choosing.

    When another does the cooking, it adds a considerable dimension of pleasure, no matter how humble the dish.

    'Sharing' is an ingredient that adds uniqueness to any meal, no two being ever quite the same, though the offering on the plate be one of long familiarity.

    How many would be content just to have something on their plate......
    So many paths to the same destination,
